Lemon Myrtle
Backhousia Citrodora leaf is incredible! The flavour sensation is a burst of lemon, lime and lemon grass. It is used with all fish, seafood, white meats and vegetables. It is also used in tea blends, dairy, biscuits, pasta and as an essential oil. Extremely versatile! |

Aniseed Myrtle
Backhousia Anisata leaf is distinguished by its sweet aniseed aroma, which is due to the high anethole content. Anethole is an oil constituent which is being used in the perfume, cosmetic, pharmaceutical and food industry. Dried or fresh, aniseed myrtle can be used as a spice in cakes, breads, chicken and fish dishes. |

Podocarpus Elatus is an intriguing fruit. It is composed of 2 segments – the hard seed which is attached to the outside of the juicy plum. Illawarra Plums are great in jams, sauces, muffins, preserves, cheesecakes and are ideal to compliment garlic and chilli. |
